RECIPE NEEDED; I have harvested all my onions and garlic today, my harvest was a bit disappointing, but managed to grow something. I'm thinking I would like to make a whole batch of French Onion soup and then freeze some of it for those cold winter nights. any suggestions :-)

ReplyDeleteor try the BBC site - you can put in the ingredients you have i.e. onions and garlic and it will give you recipes. Have fun.

oooh Onion soup - one of J's favourites :o)
ReplyDeleteYou need 3 onions (2 large)
a good knob of butter
Oxo cubes/good vegetable stock
about 2 pints of water.
Finely dice the onions and fry in the butter til golden brown, add the water and two oxo cubes.
Simmer for 15 minutes and serve with fresh crusty bread :o)
To freeze you would need to measure it out into "portion containers" ie: enough soup for one or two people.
You could also make a pickle, chutney, or of course pickled onions - depending on the other veg you have in your harvest (and apples!) :o)
To get the "beefy" taste you could use Marmite or yeast extract instead

I make my onion soup without stock just use the onion flavor --actually when I saute the onions I put a little sugar on them so they carmelize really well and that gives them a great flavor and the soup--enjoy--and garlic well roast them or make garlic mashed potatoes hmmm now I am hungry to
ReplyDeleteI would hang them up in a braid and use gradually. Another nice dish with a lot of onion is pissaladière. Cook them down gently in olive oil, cool somewhat and then place on a pizza dough and bake; anchovies are optional. Dot with olives if desired.
